Cabrales cheese is produced in northern Spain according to strict rules - it matures for up to a year in the cool, damp mountain caves of the Picos de Europa. But cheesemakers are struggling with increasingly difficult conditions due to climate change and a lack of young people wanting to keep the tradition alive. Will they be able to save the old craft from extinction?
