Patrik Mürner is convinced that mushrooms are a key to creating the circular economy and is determined to prove it with a new project: he's developing a fungi that will suck zinc out of the soil of a contaminated, disused industrial site. He's also climate-proofing vineyards with a liquid mycelium mixture, and also wants to develop compostable packaging out of mushrooms. There are a host of other start-ups inspired by the potential of mushroom, but there's a big problem holding back the sector: a far-reaching, vague patent that is difficult not to infringe.
